Bugfix – Default to “Any” instead of an empty option (#5)

* Replace SpeciesSelect with stateful LabelledSelect component
It’s a small defeat but if we use React Select and we want to update the 
placeholder with a default value once results have loaded in the 
container we need to switch to controlled props.

* Test the new stateful LabelledSelect component

* Clean mark-up and add inputId to prevent React Select from generating it
Otherwise snapshot tests sometimes fail

* Enrich GeneSearchForm tests

* Refactor helper functions in a module

* Use a single entry point to render both components
