IMP: remove composition tables (#48)

Making the pseudocount procedure a replacement operation rather than an adding operation.
This is a more stable operation (which is also done prior to the ilr transform) 
The pseudocount default is set to 0.5.  Since we are now replacing 0s the pseudocount should be less than 1
