Remove all occurrences of VariantInfo.field_count  (#278)

* Remove VariantInfo.field_count

and mondify all code to depend on header to look up the count.

* Remove VariantInfo compeletely

And fix all modules that are dependent on that tuple.

* Use Int in header NUM fields

As proposed by the reviewer.
