Remove ehcache2 (incompatible with ehcache3 v3.5+)

Ehcache3 has a classpath incompatibility with ehcache2 due to both
embedding a statistics package with the same package name. Due to API
incompatibilities and disinterest in allowing both to coexist, we are
forced to choose one. Since Ehcache3 is the supported and preferred
version by its developers, we will only compare against it going
forward. For details see https://github.com/ehcache/ehcache3/issues/2334
