[minor] Add `zlib{Deflate,Inflate}Options` options (#1306)

Useful to adjust other options, and rather than support and document
every single one, it is simpler to allow passing on an object
wholesale.

The `level` and `memLevel` options are still supported but should be
removed in 5.x.
