feat: Allow ActionMapEntry to be a function

When ActionMapEntry is a function, it will receive the Collimator entity as its first parameter
during registration. This can allow configuration such as the Resource definition to be declared
dynamically, for example merging in extra custom properties on top of the entity definition that was
loaded by Collimator.
