Adds removed variables for react select and fixes RGB values under CSS Variables (#108)

* Puts back the variables (related to the react-select) to set the styles properly

* Fixes issues related to the rgb(a) values

* Updates the SCSS to override certain colors instead of defining them to overcome the 'mixins' usage

* Converted all non-primary colors to use the CSS variables instead of references of the yaml props
