Change scripts/install-on-travis.sh to append instead of overwrite

Despite the sanity check just above this code, it feels better to
append instead of overwrite /etc/fstab and /etc/crypttab, if only
to protect against dumb mistakes (someone overriding the sanity
check without fully understanding what they're doing).
