Only display String fields in admin edit interface & save blank as null.

Rails saves blank fields as empty strings, even if they were null before. I prefer to leave them as null. The attribute_normalizer gem does that for you.

Non-String fields get converted to Strings when you update an organization, so I removed them for now.
