Fixes to enable tests to work in R CMD check

- Use `parallel::clusterCall()` to assign the variable to the cluster
rather than `clusterExport()`, which only works on exported functions.
- CRAN policy restricts the number of processes to a max of 2, so
changed `leave_cores` to `cores` and set a maximum of two when running
tests.
- Previously we did not respect the `mc.cores` option, this is now
checked before imputing the number of cores.
