Added the ability to define custom settings and mappings in a config (#10)

* update docker compose to use 5.2.2 until tirexs fixes known issue with 5.3.0

* add the ability to define your own settings and mappings

* addressed feedback and fixed tests

* addressed feedback and changed mapping to use string which is backcompat with ES 2.X

* fix mapping in dummy and use integer to better test different versions

* add q because old version of ES doesn't like a request without a query

* add id and specified name in query

* don't specify a mapping for 1.7.6

* switched to just getting the settings

* added test for version
