Clear up multicore logic

* Can use parallel::mclapply regardless of platform if mc.cores = 1.
* Remove checks in test_*.R functions in favor of forcing n_cores = 1 in *enrich() functions if os = 'Windows'.
* Tested on Windows, works fine.
* Vignette enrichment tests now use full peaks, looks better if you get some enrichment in the example, and it really doesn't take any longer to build the vignettes.
