Reconcile docs and READMEs with current code

Fixes accumulated drift across the published docs, found by reading each
doc side-by-side with the current headers/source:

- Root README.md: add the Windows PowerShell (start.ps1/stop.ps1) launch
  path; replace the 3-of-14 methodology cherry-pick with a canonical
  docs/README.md pointer + breadth subset; fix the Excel MONTECARLO.VALUE
  example (5 -> 7 args; Excel bindings have no optional defaults).
- dal-python/README.md: correct MonteCarlo_Value kwargs (modelData/num_path),
  document the curve-calibration binding surface, drop the stale test count.
- dal-web/README.md: async valuation uses asyncio.to_thread, not a FastAPI
  background task.
- docs/installation.md: pybind11 is a vendored git submodule, not FetchContent.
- docs/methodology: random.md Brownian-bridge times t_i=i+1; dupire.md
  ONE_HOUR_YF/HALF_DAY_YF; script_engine.md MRG32k32a + example path;
  underdetermined_search.md Controls_ defaults + signature fixes;
  yield_curve{,_jacobian}.md stale anonymous-namespace DiscountPWLF_ claims.
- docs/experimental: analytic-Jacobian doc ANALYTIC-is-default + TapeGuard_
  + #if gate; replicate-ptirds Python bindings shipped + remove fabricated
  SinglePeriodContext + schedule path.
- CHANGELOG.md: add 2026-07 entry for the Sobol normal-draw polish default
  flip (reproducibility change, ~1e-15 -> ~1e-9).
