fix: Increase image preview size and update serializer fields

Raised the max-height of image previews in the blog admin from 40px to 100px for better visibility. Updated BlogPostSerializer to set 'required=False' for 'reading_time' and 'content_preview' SerializerMethodFields, making them optional.
