fix(courses): correct pattern match on create_course_config result

Courses.create_course_config/2 returns the raw Ecto.Multi transaction
result, which on success is {:ok, %{course: course, course_reg: reg}}.
The controller matched {:ok, course}, binding the whole changes map to
`course`, so `course.id` in the success log raised KeyError and the
request returned a 500 even though the course was created.

Match {:ok, %{course: course}} to extract the actual Course struct.

Regression from #1286, which introduced the `course.id` logging line.
