feat: Implement Sentry error reporting

This feature integrates Sentry into the application to provide
real-time error tracking and reporting.

- Initializes Sentry client using the `SENTRY_DSN` environment
  variable (loaded via `.env` or standard environment).
- Adds Sentry middleware to the HTTP server to capture panics
  and request errors.
- Captures critical DNS dispatching errors.
- Updates documentation and dependencies.
