* [Claude] Add PHP 8.5 to CI test matrix

* Refactor tests to use concrete test models instead of overload mocks

- Replace Mockery overload mocks with concrete test model classes
- TestAuthScopableUser implements AuthScopable with scope tracking
- TestNonScopableUser for testing non-scopable behavior
- Avoids class loading conflicts with EloquentUserProvider inheritance

* Use anonymous classes to avoid global namespace pollution

- Replace global test model classes with anonymous classes
- Each test method is now self-contained
- No risk of test interference or namespace conflicts
