Fix Xephyr handling in tests

- On teardown, only kill Xephyr if it's still running

- Re-find a new DISPLAY each time tests are run (there are some problems
  getting and keeping displays when running on Travis containers)

- Try to re-start Xephyr once if it fails the first time
