fix: stats service data validation and crash safety

- Add try/catch around heartbeat and islands NATS subscription callbacks
  to prevent unhandled errors from crashing the service
- Replace position! and center! non-null assertions with null guards
  that skip malformed messages
- Fix hot-scenes handler crash when scene metadata is missing by
  filtering out scenes without required metadata fields
