feat: select the JVM to launch via $MAGICJAR_JAVA

The generated preamble launched a bare `java` from PATH. It now launches
`"${MAGICJAR_JAVA:-java}"` at both sites (the .jar fast-path and the bare-name
path), so a caller can pin a specific JVM for a single invocation, for example
a legacy tool that requires Java 8, without mutating PATH.

Backward compatible: with `MAGICJAR_JAVA` unset the wrapper resolves to `java`,
byte-identical to previous behavior.

- README: document `MAGICJAR_JAVA`; bump the version to 0.3.0 and the example
  image/release tags from 0.1.0 to 0.3.0
- tests: assert both launch sites use the override in the preamble; add
  integration tests proving a set `MAGICJAR_JAVA` is honored on both the
  bare-name and the .jar fast-path (a fake `java` records which JVM ran)
