refactor(schema): transition to Zoi for schema definitions across Jido modules

- Replaced `TypedStruct` with `Zoi` for defining schemas in `Jido.Action`, `Jido.Instruction`, and `Jido.Plan`.
- Updated schema validation logic to utilize Zoi's capabilities, enhancing error handling and validation processes.
- Improved documentation for schema parameters and validation methods.
- Adjusted tests to align with the new Zoi-based schema structure and validation outcomes.
