Add support for PHP 8 (#11)

* Support PHP 8 and drop support for 7.1 & 7.2

* Increase minimum PHPCS version

* Fix PHP8 deprecation

Ensure optional parameters follow non-optional paramters. This functionality is deprecated in PHP 8.0 and will be considered a syntax error in future versions.

* Increase minimum version of `php-di/invoker`

* Update Coveralls
