decouple tests from the stems of wamania/php-stemmer

The tests pinned the exact stems of the external library, so a rule change
there would have failed them although this bundle works correctly.

- SnowballStemmerTest only checks the adapter: locales map to the library's
  stemmer of that language, unsupported languages stay unchanged
- The other tests use a deterministic SuffixTestStemmer
- Configure a schema manager factory for the SQLite test connections
