feat(tui): server-selection knob + finish device_catalog→servers rename

Land the two deferred server-abstraction follow-ups.

- Launch picker gains a `server` row under `preset`, shown when a model
  has >1 compatible build. Cycling re-scopes the Device row + multi-GPU
  gating to the picked server's devices and swaps the knob set on a
  cross-backend switch; the pick rides `LaunchParams.server` and reopens
  from `last_params`.
- Drop the flat `device_catalog` from status + TUI entirely. The neutral
  `servers` array is the only launch-device surface now, and
  `llama_cpp::LaunchDevice` is deleted.

Server ids use a plain `-` separator (`llamacpp-rocm`) instead of the
hard-to-type middle dot. A device-less engine (ds4/lemonade, no
`--list-devices` probe) is the bare backend id; label ds4's compute build
via `name:` (`ds4-rocm`; ds4 builds Metal/CUDA/ROCm, no Vulkan).

Fix: `last_params_list` wasn't projecting `server`, so the picker's server
row never reopened on the last-used build (found via TUI E2E on a real
2-build host; regression test added).
