chore: fix PHPStan level-8 errors and apply CS Fixer

- Remove stale excludePaths from phpstan.neon (renderer files no longer exist)
- Add array_values() to preserve list<> type invariants in Calendar and RecurrenceRule
- Add missing iterable value types to ICalParser, RecurrenceRuleTest, ResourceCalendarTest
- Fix array_key_last() null-offset warnings in CalendarTypeTest with count()-based indexing
- Remove unused dates() helper from RecurrenceRuleTest
- Expand single-expression constructors to explicit body blocks (CS Fixer)
