ci: parallelize tests with -n auto + single-version coverage (#179)

Adds -n auto (pytest-xdist) to addopts and declares pytest-xdist in the dev extra; collects coverage on Python 3.12 only. ~2.5x faster suite. Test/CI config only, no package change.
