2.15.0: surface excluded viral clones + show them in the selection funnel (#136)

exclude_viral writes data/excluded_viral_clones.csv (auditable, not silently dropped); selection-shortlist funnel gains a Non-viral stage before Selected. Main pipeline funnel unchanged (viral clones remain in full_sequences). +tests.
