refactor: improve git diff logic and UI cleanup

- Update `diffArgs` to accept an exclusion flag for better control.
- Enhance error handling in `DiffWithColor` for `io.Copy` and
`cmd.Wait`.
- Simplify `repeatCount` calculation in `diffViewModel` using `max`.
