docs: address PR review comments on NodeClaims documentation

- Remove bullet list from intro, fold key facts into prose instead
- Clarify that Karpenter-created NodeClaims are owned by a NodePool
  (manually created ones may not be)
- Note that users can create NodeClaims manually
- Remove redundant observability bullet (already covered in existing text)
- Move annotated YAML and field-by-field API reference to the bottom
  under a new 'NodeClaim API reference' section, keeping lifecycle
  content near the top as the primary focus
- Demote field docs from h2 to h3 (subsections of API reference)
