chore: more dependency updates

Remove @vitest/expect and the Jest shims while we're at it; we're not
using them anymore.

The culprit with test execution was json-schema-faker, used to generate
fake data for certain tests. Upgrading from 0.5.9 to 0.6.0 introduced
the error.
