* fix: guard simdjson find_package inside NOT BUILD_TESTS_ONLY block

* fix: reset liveReady in start(), use find_field_unordered, extract applyUpdateCore

Docstrings generation was requested by @bountx.

The following files were modified:

* `src/binance_adapter.cpp`
* `src/decimal.hpp`
* `src/order_book.cpp`
* `src/prometheus_format.hpp`

These files were kept as they were:
* `src/main.cpp`
* `tests/test_order_book.cpp`

These file types are not supported:
* `CMakeLists.txt`
* `vcpkg.json`
