Add default resource limits to VirtualMCPServer vmcp container (#3689)

The vmcp container was created without CPU/memory resource limits,
allowing unbounded resource consumption. Add sensible defaults
(100m/128Mi requests, 500m/512Mi limits) that users can override
via PodTemplateSpec.

Closes #2873
