Store `StudyMetadata` in GridFS (GSI-1919) (#4)

* Store study metadata in gridfs instead of mongo collection

* Add a find_all method to the gridfs dao

* Add v2 migration

* Update template files

* Bump version to 2.1.0

* Improve and test migration and gridfs dao logic

* Add entrypoint for migration

* Switch to using GridFSBuckets and test DAOs better

* Simplify a conversion to bytes
