test(e2e): add labels and split CI via matrix\n\n- Label suites into core/mcp/proxy|middleware|stability\n- Add LABEL_FILTER to runners (bash & bat)\n- Split GitHub Actions job into matrix of 3 categories\n\nCounts (It() approx): core=40, mcp=53, proxy|middleware|stability=32
