Swap knative logging to controller-runtime logging (#827)

Upstream made this change back in Feb 2024. See this link:
https://github.com/kubernetes-sigs/karpenter/pull/1050

This should resolve issues with some of our logs having hard to read timestamps.
Also removes the rest of knative (there wasn't much).
