Implement `fold_unmapped_s` in terms of `fold_mapped_s`

If we consider `seek_mapped` to be "find the data I want" and
`seek_unmapped` to be "find the data I want to skip" then by flipping
these functions over, we can fold over the unmapped data instead of the
mapped data.
