test.sh: harden worker selection (cpu reserve + transparent log)

Add cpu-reserve cap so the box stays responsive (1 core → 1; 2-3 →
cores-1; 4+ → cores-2). Log platform/cpus/ram_free/mem_cap/per_worker
inputs so the chosen worker count is auditable. Robust cpu/RAM probe
across macOS and Linux, bash 3.2 safe (set -eo pipefail, not -u).
Add PER_WORKER_GB / TEST_SH_MIN / TEST_SH_MAX env-var tunables.
