Fix Copier round-trip drift between repo and template/

Bring template/ back in sync with the repo so check_copier.sh passes:
sync pyproject.toml versions, dependabot.yml, and the 8 workflow files
that dependabot bumped only at the root; copy docs/header.html;
add /build/ to template/.gitignore; conditionally include the
"Creating a New Project with Copier" README section behind a
project_slug == 'example' guard.

Delete stale literal-bracket scaffolding (template/[[project_slug]].org
and template/src/[[include_prefix]]/...) that pre-dated the triple-
bracket _envops switch in copier.yml -- those names never templated
and ended up as garbage in rendered output. Also remove the dead
non-jinja shadow files (CMakeLists.txt, Makefile, README.md, Doxyfile)
that were silently overwritten by their .jinja siblings on render.

Make dependabot watch /template as well as / for github-actions so
future bumps land in both trees. Exclude uv.lock and local dev
artifacts from check_copier.sh's diff so the script doesn't false-
positive when run locally.
